Crispy Goose Cakes


Serves 4-5


INGREDIENTS

        GLEBELANDS FARM FREE RANGE GOOSE
        6oz / 170g chopped cooked Glebelands Farm Free Range Goose meat
        12oz / 340g mashed potato
        1 red onion – diced
        ¼ red pepper – diced, (or a chilli - optional)
        pinch of salt and course ground black pepper
        knob of goose fat or glug of olive oil
        1 egg                                          

                                                                                                                                     

METHOD

  1. Fry onions in a little goose fat (or olive oil) until golden brown and add to the chopped Glebelands Farm Free Range Goose meat, along with the mashed potato and red pepper (or chilli).
  2. Season with the salt and course ground black pepper and mix thoroughly.
  3. Whisk the egg and add enough to the mixture to bind it together. 
  4. Now shape the mixture into cakes (approx 6-8) and fry in the goose fat (or olive oil) until golden brown and hot in the middle - or you can bake them in a moderate oven until golden brown and crispy.
  5. Serve with a fresh salad.
